Catfish Sandwich

 10 oz Cleaned catfish filets
 4 Small ciabatta square sandwich buns
 ½ cup pickles
 2 cups panko bread crumbs
 4 oz cajun seasoning
 5 whole eggs - beaten
 1 oz whole milk
 1 tbsp garlic salt
 3 cups canola oil

 1 cup mayonnaise
 1 lemon juiced
 1 tbsp garlic salt
 1 tsp granulated sugar
 1 tbsp chopped chives
 1 small bunch fresh basil
 1 pinch black pepper

In a small glass bowl combine the mayo and the remaining ingredients mix well and serve

In a large heavy bottom saute pan add the oil and pre heat on low, In a small glass bowl add the eggs and milk and whisk together and place to the side.

Place the flour and bread crumbs onto a large flat plate or other surface. In a separate bowl add the fish and season with the garlic salt. Then place the fish into the egg wash and the breadcrumbs / flour mixture and place into the oil.

Let the fish cook for 6 to 8 minutes while controlling the heat. Remove the fish when cooked and place into a plate with paper towels.

Start with slicing the bread in half and spread the aioli on both sides of the bread and add the fish and second half of the bread and serve.
