Stuffed with tender veggies and melted cheese, this rolled meatloaf delivers classic comfort with a flavorful twist in every slice from 'Downright Delicious with Yo-Yo'.

Preheat oven to 350 degrees.
Using an extra-large mixing bowl, combine bell peppers, onions, minced garlic, salt, pepper, garlic powder, onion powder, parsley flakes, 2 eggs, and breadcrumbs and mix well.
Next, coat a large cutting board with olive oil, place the seasoned ground beef on top of the board, and flatten it out into a 10-in circle.
Fill the middle of the circle with cabbage, spinach, corn, and 1 tbsp of breadcrumbs. Season with seasoning salt and top the filling with shredded cheese. Carefully roll the meatloaf so the veggies are securely sealed in the middle of the meatloaf.
Coat a loaf pan with olive oil making sure the bottom and all sides are coated with the oil, then place the stuffed meatloaf into the baking pan, and place in the oven for 1 hour and 2o minutes. Remove from the oven and allow to rest for 10 minutes.
Top with your favorite sauce or gravy (seasoned tomato sauce, bbq sauce or beef gravy) and serve with mashed potatoes.
