 8 cups Mixed Greens(Romaine, arugula, butter lettuce, iceberg, baby spinach)
 1 Large CucumberSliced
 ½ cup Red Cherry TomatoesHalved
 ½ cup Yellow Cherry TomatoesHalved
 ½ cup Dried Cranberries
 ½ cup Walnuts
 ½ cup Almonds(Sliced or Slivered)
 ½ cup Grated Parmesan Cheese
 1 tsp Italian Seasoning
 1 cup Sliced Tri-Color Sweet Peppers(Red, Yellow, Orange)
 Salt to Taste
 Pepper to Taste
For Vinaigrette
 ½ tbsp Dijon Mustard
 ¼ cup Balsamic Vinegar
 ¾ cup Olive Oil
 1 tsp Italian Seasoning

Use a large mixing bowl, place 4 cups of the mixed greens into the bowl. Next, add only half of the sliced cucumbers, Italian seasoning, salt, pepper, red cherry tomatoes, yellow cherry tomatoes, cranberries, walnuts, almonds, sliced tri-color sweet peppers, then the grated parmesan cheese. Give the first layer of salad a gentle toss, making sure all ingredients are mixed.

Then follow the same process with the remaining ingredients, beginning with the mixed greens.

Drizzle vinaigrette over the whole salad and toss again, and serve alongside your spaghetti and meatball entree.

For Vinaigrette

Using a medium-sized mixing bowl, add the Dijon mustard, balsamic vinegar, and Italian seasoning and mix well.

Next, slowly add the olive oil and constantly whisk until all ingredients are smoothly combined.

Season with salt and pepper to taste and set aside. Give the vinaigrette a quick whisk right before pouring it over the salad.
