Yo-Yo's Fried Chicken Sandwich

 4 Boneless, Skinless Chicken Thighs
 2 tbsp Onion Powder
 2 tbsp Garlic Powder
 2 tbsp Paprika
 2 tsp Cayenne Pepper
 2 tbsp Parsley
 1 tbsp Cumin
 ½ tbsp Sea Salt
 2 cups All-Purpose Flour
 2 cups Buttermilk
 1 qt Canola or Vegetable Oil
 1 cup Mayonnaise
 ¼ cup Siracha
 ¼ cup Pickles
 4 Potato Rolls
 Butter Lettuce
 1 Large TomatoThinly Slice
 8 Slices of Provolone Cheese
 8 Slices of American Cheese

Using a large bowl, mix half of the measurements of all dry ingredients together (saving the remainder to season the flour). Add the buttermilk and mix well. Place chicken thighs into the mixture making sure all the chicken is submerged into the marinade. Cover with plastic wrap and place in the refrigerator for 30 - 60 minutes.

Next, using a small bowl, mix the mayonnaise and siracha together and place in the refrigerator until you are ready to build the sandwich.

Next, place a cast-iron frying pan filled ¾ full with canola oil over medium high heat. While the oil is heating, season the all-purpose flour with the remainder of the same dry ingredients used for the marinade and mix well.

Using tongs, remove each piece of chicken from the marinade and let all the excess butter milk drip off. Dredge and coat the chicken with the seasoned flour, and place it in the hot oil and fry for 3-4 minutes on each side until golden brown.
