Get a taste of the tropics with Yo-Yo's Island Curried Shrimp full of spice and flavor from 'Downright Delicious with Yo-Yo'.

Put shrimp in a large bowl and season with sazón, curry powder, garlic powder, thyme, allspice, and nutmeg, and mix well.
Grate the ginger and add one tablespoon of minced garlic. Add the chopped green onion and the diced white onion, and mix well, making sure the shrimp is completely covered with all the herbs and spices.
Cover the bowl with plastic wrap and sit in the refrigerator for 30-60 minutes so flavors can marinate.
Place a large stock pot coated with olive oil over medium heat. Add the diced onions, two tablespoons of minced garlic, the diced bell peppers, and mix well. Reduce the heat to low, allow to cook down for3-4 minutes.
Next, add a ½ tablespoon of olive oil, followed by the curry powder, and mix well. Add the diced potatoes and the shrimp stock and continue to mix. Cover with the lid and allow to simmer for 7 to 8 minutes until potatoes are tender.
Add the sprigs of thyme, Bay leaves, one tablespoon of garlic, and the whole Scotch bonnet and let it cook for 5 minutes.
Next, add the remainder of the shrimp stock to the pot, then add the marinated shrimp and mix. Allow to cook for two to three minutes until all shrimp are pink.
Add ½ tsp more of garlic and onion powder, allspice, seasoning salt, and black pepper.
Add the coconut milk and mix well, cover with the lid, and remove from the heat. Remove bay leaves and sprigs of thyme. Serve with basmati rice and cabbage or other vegetable of choice.
