Hearty and slow-simmered, this one-pot chili brings bold spices and comforting flavor together in every spoonful from 'Downright Delicious with Yo-Yo'.

Coat a large stockpot or Dutch oven with olive oil and place over medium heat. Once pot is hot, add the onions, pepper, minced garlic, fresh diced tomatoes, and mix well.
Season with salt and pepper, mix well, and allow vegetables to cook down for 5 minutes.
Place ground beef in a large bowl, season with salt, pepper (to taste), chili powder, oregano, cumin, garlic powder, tomato paste, coriander, canned diced tomatoes, tomato paste and mix well.
Then place the whole ancho chilies on top. Cover with a lid and allow to simmer for 20-30 minutes and serve.
Garnish each serving with shredded cheese and sour cream.
