 2 tbsp Olive Oil
 2 cups Baby Bella Mushrooms Thinly Sliced
 1 Large Red Bell PepperSliced and Cut into 1-Inch Strips
 2 Large CarrotsThinly Sliced
 4 Cloves Fresh GarlicThinly Sliced
 Salt and Pepper to Taste
 1 tsp Minced Ginger
 8 cups Shrimp or Seafood Stock
 3 cups Sliced Cabbage
 3 cups Chopped Asian Broccoli
 16 oz Package of Rice Noodles
 1 tbsp Soy Sauce
 1 tbsp Rice Vinegar
 2 tbsp Garlic Chili Spice
 2 lbs Large Peeled and Deveined Shrimp
 Chopped Scallions(Garnish)

Place a Dutch oven over medium heat and coat with olive oil. Add the sliced mushrooms and cook, stirring, until they begin to wilt.

Add the sliced bell peppers, carrots, garlic, and ginger, and mix well.

Season the vegetables with salt and pepper to taste, then add the shrimp or seafood stock, cabbage, and Asian broccoli, stirring until all ingredients are combined and the stock begins to lightly simmer.

Add the rice noodles and gently mix them into the broth to soften. Add soy sauce, rice vinegar, garlic chili spice, and mix well.

Add the shrimp to the hot broth, turn off the heat, cover the pot, and allow the shrimp to cook in the residual heat for 3–5 minutes. Serve garnished with chopped scallions.
