 3 3 Lobster Tails
 4 tbsp Butter
 1 tbsp Fresh Tarragon
 4 Split Top Brioche Hot Dog Buns
 2 tbsp Mayo
 2 Stalks Celery, Chopped
 Kosher Salt, To Taste
 Ground Black Pepper, To Taste
 3 tbsp Chives, Chopped
 ½ Juice of lemon
 ½ tsp Cayenne

Begin by removing meat from the shell of lobster

In a pan over medium heat add 2 tbsp of butter as butter begins to froth add lobster tails. saute lightly until just tender.

Remove lobster meat set to the side, let cool for ten minutes then chop into large pieces
in a large mixing bowl add lobster, mayo, celery, chives, cayenne, tarragon, salt, pepper, and lemon juice
fold the mixture together, set aside to prepare bread.

Take hot dog buns spread the remaining 2 tbsps of butter across the outside of the buns.

Place buns in a pan over medium heat and leave until golden.

Once each bun has been browned, fill the buns with the lobster mixture.

Serve with potato chips and enjoy!
