Yo-Yo’s kitchen is transformed into a New Orleans kitchen as she serves up a taste of Creole cuisine—The centerpiece is a decadent Catfish Étouffée. Yo-Yo starts off by cooking up the “holy trinity” of onions, bell peppers, and celery. Then she moves on to making her roux, with a right and a bit of spice, as she lets the catfish simmer low and slow in the roux and spices. She then moves on to the traditional New Orleans Hurricane. With fresh juice, lemon, and a heavy-handed pour of both light and dark rums. Served in the iconic curved glass with a mountain of crushed ice.
