Killer Grilled Cheese
Yields5 Servings
8 thick slices of a Tartin Loaf, about 1 - inch each
 8 slices Muenster Cheese
8 thin Slices Vine - Ripe Tomato
 8 slices Havarti Cheese
 12 fresh Basil Leaves
 8 slices Sharp Cheddar Cheese
½ stick unsalted butter, at room temperature
1

Lay 4 slices of the bread on a cutting board. Place 2 slices of the Muenster cheese on top, overlapping to ensure that the cheese does not go over the edge. Place 2 slices of Tomato, overlapping also not allowing the tomatoes to go over the edge of the bread. Lay 2 slices of the Harvarti cheese on top of the tomato slices, without allowing it to go over the edge of the bread.

2

Lay 3 basil leaves on top of the Havarti cheese and finally lay the Cheddar cheese on top of the basil leaves, overlapping the cheese as necessary to keep the cheese from going over the edge of the bread.

3

Place a second slice of bread on top of the cheddar to form a sandwich and place a 12-inch cast iron pan on the stove and set over a medium low heat.

4

Spread butter onto the top of the bread and place the bread, buttered side down into the cast-iron pan. Place a piece of parchment paper over top the sandwiches and weigh them down with a smaller pan to ensure even and direct contact with the pan. Cook the sandwiches undisturbed for 6-8 minutes, or until the bread is golden brown and the cheese at the bottom begins to melt. Remove the weight, and the parchment paper, and rub the tops of the sandwiches with more butter. Turn the sandwiches over and cook on the newly buttered tops of the sandwiches.

5

Cook the sandwiches by draping a piece of parchment over their tops and weighing the sandwiches down with another pan and cook for another 5-7 minutes, or until the bottoms are golden brown, and the cheese are fully melted, and serve.
