Take equal parts of sugar and water in a saucepan. (You’ll need only about 1 oz each for each drink).
Bring the sugar water mix and bring to boil.
Cook for 2 minutes, lower heat and simmer for 5 minutes.
Remove from heat and let the simple syrup cool.
Take a mixing glass and add 2 oz. Rye whiskey.
Add ¾ oz. of simple syrup.
Add 5 dashes of Peychaud’s bitters.
Add ice and stir with a bar spoon.
Absinthe Rinse (this is an aromatic element that finishes off the cocktail): Take a coup glass and add Absinthe. Swirl around and coat the glass.
Pour the cocktail in glass.
