Mix the sugar and water in a saucepan.

Peel 2 cups of grapefruit and add 1 cup of chamomile flowers (you can find at your local farmer’s market) to the sugar water mix and bring to a boil over high heat.
Cook for 2 minutes, lower heat, then simmer for 5 minutes.
Remove from heat and pour through a strainer. Let the simple syrup cool.
Pour 2 oz. gin into a cocktail shaker filled halfway with ice.
Add 1 oz. grapefruit-chamomile simple syrup.
Add 1 oz. lemon juice.
Shake vigorously.
Pour into a Collins glass.
Garnish with lemon peel and serve.
