Combine the sugar and water in a saucepan.
Dice the pears and add to the sugar water mix, then bring to a boil over high heat.
Continue to boil for 2 minutes then lower heat and simmer for 5 minutes.
Strain liquid through a fine mesh strainer into a glass jar with a tight fitting lid.
Allow syrup cool completely to room temperature.
Add the cinnamon sugar mixture to a small bowl wide enough to allow for dipping the rim of a champagne flute (or your choice of glass).
Dip the rim of the glass in water, then rim glass with the cinnamon sugar mix.
Pour 1 oz. of the pear cinnamon simple syrup in your glass.
Add your choice of sparkling wine.
Drop in a cinnamon stick as a garnish and serve.
