 1 tbsp butter
 1 cup red onion
 1 cup white onion
 ½ cup andouille sausage
 ½ cup sage sausage
  cup shiitake mushrooms
 6 eggs
 ½ cup mixed cheddar cheese
 2 tbsp scallions chopped

 ½ cup andouille
 ½ cup sage sausage
 ½ cup diced peppers
 3 tbsp scallions, chopped
  cup shrimp (cooked)
 3 tbsp lump crab
 6 eggs

Start by adding the Butter into the sauté pan, as the butter starts to melt, add all ingredients in an order that best fits your need.

Sauté all ingredients for two to three minutes, followed by the beaten eggs. Cook the eggs and ingredients for three to four minutes until solid and fold. Cook for another two minutes and add the cheese.
