 3 tbsp olive oil, divided
 1 shallot, minced
 3 cloves garlic, minced
 ½ cup panko breadcrumbs
 ½ cup whole milk ricotta
  cup chopped fresh basil
 2 eggs
 2 tbsp chopped thyme
 1 tbsp dried oregano
 1 tbsp dried parsley
 1 ½ tsp kosher salt
 1 lb ground beef
 1 lb ground turkey

Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper and a cooling rack.

Place a small pan over medium heat with 1 tablespoon olive oil. Add the shallot and garlic and cook until the shallots are translucent, about 8 minutes. Set aside to cool slightly.

In a large bowl, combine the shallot mixture, breadcrumbs, ricotta, basil, eggs, thyme, oregano, parsley, and salt. Add the beef and turkey and use hands to mix until combined.

Portion into balls that are roughly the size of a golf ball and arrange on the lined baking sheet. Place in refrigerator for about 15 minutes to chill. This will help them keep their shape during cooking.

Drizzle with the remaining 2 tablespoons olive oil. Bake until cooked through, about 25 minutes.
Serve warm with sauce of choice.
