True Southern Collard Greens

Yields1 Serving
 1 lb thick cut bacon
 2 large white onions (diced)
 8 cloves garlic, smashed
 4 large bunches fresh collard greens
 2 tbsp sugar
 2 cups white vinegar (divided)
 2 tbsp red chili flakes

Removing the spine of the greens, cut lengthwise and wash thoroughly. Cut the bacon into large cubes, place in a pan over medium high heat and cook until fat is rendered. Remove the bacon when crispy then add the onions to the bacon fat and saute for three to five minutes.

Add the garlic and the greens, cover with water. Add the sugar and ½ the vinegar along with the chili.

Cook for two hours on medium heat.

After two hours, taste for seasoning then and add the crispy bacon.

  3. Number 2 says; Add 1/2 the vinegar; when, in the recipe do I add the remaining vinegar. This has been omitted from the recipe. Thank you

    1. One cup is to wash the greens in. The other 1/2 (one cup) add to the water for cooking.
